Recipe for a Snowstorm: winter window
What to stock up on when you're stuck inside

During the day before the last snowstorm, I had to laugh at all the crazy people (myself included) fighting their way into the grocery store to arm themselves against indoor boredom and to possibly fortify their energy before shoveling a ton of snow.  I kept thinking that everyone would actually be better off if they stayed home and dug into their pantry or used up what's in the fridge instead of buying that white bread or processed sugar snack.  I would recommend snacking on food that is energy-dense and nutritious.   

 

Here are some of my ideas for a healthier version of snowstorm food fare.  With most of these foods, you don't have to go out to the store the last minute to purchase them--you can avoid the madness and stock up in advance!

 
  • Baked kale chips: drizzle olive oil and sprinkle salt on kale leaves before baking in oven on low temperature for ten minutes. Yummy like potato chips, but way healthier. See my recipe.
  • Baked yams: with a little butter and nuts on top, or a smear of almond butter.
  • Air-popped organic popcorn is the best method for popping; second is microwavable.  Try drizzling olive oil and sea salt on the warm popcorn.
  • Granola: homemade is best so that you can control the sugar content. See my recipe.
  • Homemade cookies:  Reinvent your favorite recipes by cutting the   sugar content in half (it will still be sweet), using whole wheat flour and replacing the chocolate chips with nuts or seeds.
  • Plain oatmeal: cook from scratch and add a fried banana with a handful of nuts and if necessary, a gentle sweetener like brown rice syrup or agave nectar.
  • Homemade pizza: Keep the pizza dough frozen until ready to use. Top with pre-cooked vegetables or last night's leftovers!  Anything works!
  • Bean soup: provides warm, dense energy and is easy to heat up; many organic varieties are available in cans. See below for my favorite black bean soup.

Recipe of the Season: Black Bean Soup
 A variation from Moosewood Restaurant Daily Special

Serves 4-6

Prep Time: 25-30 minutes -- Simmering Time:  20 minutes

This soup is a great winter side dish or main course, and another way to incorporate the benefits of the black bean into a meal.  All beans offer fiber and protein, and black beans in particular, provide antioxidants which support the immune system.  You will also love the flavor and will enjoy matching it up with cornbread, salads or sandwiches. Enjoy!

Ingredients

¼ cup olive oil

2 cups chopped onions

4 garlic cloves, minced or pressed

2 cups peeled and diced carrots

1 ½ tsp. ground cumin

1 cup celery

1 cup chopped green bell peppers

Two 15-ounce cans of black beans, undrained

2 cups chopped fresh or undrained canned tomatoes (14 oz. can)

½ cup orange juice

½ cup water

 Optional:  Top finished soup with sour cream and chopped fresh cilantro

 

Instructions

  1. Warm the oil in a soup pot. Saute the onions and garlic in the oil for about 10 minutes, stirring frequently, until the onions are translucent.
  2. Add the carrots and cumin and cook on medium heat, stirring often, for a few minutes.
  3. Add the celery and bell peppers, lower the heat, cover and cook for about 10 minutes.
  4. Add the beans, tomatoes, oj and water, and simmer, covered for 20 minutes.

Notes: To save time, prepare the carrots, celery and bell peppers while the onions cook, just remember to stir the onions in between chopping!  If using fresh tomatoes, you may want to simmer the soup for an additional 5 minutes.
