Nutrient 
A few weeks ago,
I attended a conference called "Healing your Life". I received much
advice that day, but the most fascinating and profound information
related to the current research that links happiness or pleasure to
better health. Specifically, when the body experiences pleasure, it
sets up a chain of events that increase the amount of nitric oxide
in the lining of the blood cells. The nitric oxide helps to maintain
the integrity of our cells that, in turn protect us from disease. We
therefore learn from our body's chemistry, that pleasure is
not a luxury in our lives, it is a necessity. Our happiness
will keep us physically and emotionally healthy. So, as you spread the
cheer this holiday season, know that you are improving your health, and
the health of those around you. Make it a habit and continue to
produce that powerful nitric oxide throughout the year!

Recipe of
the Month: Jam Dot Cookies
These are my
favorite cookies, which means I may have offered you some in the recent
past. Made
without wheat, refined sugar or animal products, you can enjoy these
cookies without any guilt (as long as you don't eat the whole batch at
once!).
Yield:
Approximately 8 dozen 2" cookies (or 4 dozen 3" cookies)
Ingredients:
2 cups raw almonds
2 cups rolled oats
3 cups oat flour
1 ½ tsp. cinnamon
Pinch of salt
1 cup maple syrup
1 cup canola/safflower oil
Fruit juice-sweetened jam
Procedure:
Set oven to 350 degrees
1. In two separate
batches put almonds into food processor until it's coarse meal; place
in (very) large bowl.
2. Put all of oats in food processor until it's coarse meal; add to
large bowl.
3. In a separate bowl combine oat flour, cinnamon and salt. Whisk
together and add to large bowl and mix all dry ingredients.
4. Pour oil in to large bowl.
5. Using same measuring cup to pour maple syrup into large bowl.
6. Mix all ingredients with wooden spoon. Finish mixing with large
rubber spatula folding bottom of mixture on to top.
7. Let the entire mixture sit for awhile just to let the wet
ingredients absorb into the dry (about the amount of time to wash the
dishes)
8. Scoop out 1" or 2" balls and place on sprayed cookie sheet.
Depress center of cookie with your finger. Use the 1/8 teaspoon to
scoop out jam and drop it into the cookie well.
9. In approximately 10 minutes cookies should be golden on bottom and
slightly firm to the touch.
10. Let sit on cookie sheet 2 minutes before removing to rack or
parchment paper to cool.
